For my Cooking session from this book, I opted for the Maple Sausage and Waffle Casserole. Because if there is one thing my kids love it's breakfast food all the time. Another great thing about this recipe is it was made with ingredients I typically have on hand anyways.
Maple Sausage and Waffle Casserole
8 Frozen Waffles
1 pound maple sausage, cooked and crumbled
1 cup cheddar cheese
6 eggs
1 cup milk
1/4 cup maple syrup
Pinch of Cinnamon
Maple Syrup (for topping)
The first step was to tear the waffles into bite size pieces and put half of those into the bottom of my 8x8 baking dish. Then I topped that with half of the cooked sausage and sprinkled with half of the cheese. Then did another set of layers of the same, waffles, sausage and cheese.
Meanwhile I had my daughter mixing together the eggs, milk, syrup and cinnamon.
Then we poured the egg mixture over the layers and put it covered into the fridge for an hour. You can leave it overnight in the fridge as well.
Bake at 325 degrees for 45 minutes.
You can eat it as it is, or add maple syrup if you so desire.
This dish was a total win with 2 out of three of my daughters and my husband and I of course.
